Ingredients:
For the Zesty Cilantro Vinaigrette:
1 cup chopped fresh cilantro
3 tablespoons white-wine vinegar
2 cloves garlic, peeled
1 teaspoon ground cumin, divided
1/2 teaspoon salt, divided
1/4 cup extra-virgin olive oil
For the Salad:
3 cups chopped romaine lettuce
1 cup chopped radicchio
1 cup sliced radishes
For the Mashed Black Beans and Avocado:
1 (15 ounce) can no-salt-added black beans, rinsed
1/2 teaspoon chili powder
1/2 teaspoon garlic powder
1 ripe avocado
1 tablespoon lime juice
For the Wrap:
4 (8-inch) whole-wheat tortillas or gluten free wraps
Directions:
In a mini food processor or blender, combine the chopped cilantro, white-wine vinegar, garlic, 1/2 teaspoon of cumin, and 1/4 teaspoon of salt. Pulse until the ingredients are finely chopped. While the processor is running, slowly stream in the extra-virgin olive oil to create a smooth vinaigrette. Transfer the vinaigrette to a large bowl.
Add the chopped romaine lettuce, radicchio, and sliced radishes to the bowl with the vinaigrette. Toss the salad ingredients until they are well coated with the zesty cilantro vinaigrette.
In a medium bowl, mash the black beans with the remaining 1/2 teaspoon of cumin, chili powder, garlic powder, and 1/4 teaspoon of salt. In a separate small bowl, mash the ripe avocado with lime juice until creamy.
Spread a generous amount of the mashed black beans and avocado mixture onto each tortilla or wrap. Top with the zesty salad mixture.
Roll up the tortillas or wraps, enclosing the fillings inside.
